Strawberry Saffron Cake
OMG! I’m in Raw Food heaven right now! My backup singer and her family were supposed to stop by yesterday, but their precious little angel felt bad so they had to cancel last minute. I had already made this delicious Strawberry and Saffron Cake, so now I guess me and my boys have to finish it by our selves…buhuhu. Seriously guys, this cake is divine, and the best part is, it’s good for you! Can you believe it? It’s sugar free, high protein and full of good fats and vitamins.
BOTTOM:
1 cup of soaked Organic Almonds
1 cup of soaked Organic Cashews
1 cup of soaked Organic Sunflower Seeds
1/4 cup of Soaked Organic Sesame Seeds
9-12 organic Dates (depending on size)
1 TBSP Organic Coconut Oil
1 pack of Organic Saffron
Mix everything together in your food processor. Shape the dough into a cake on your plate.
TOPPING:
2 cups of Organic Strawberries (frozen)
1 Cup of Soaked Organic Cashews
1/2 Cup of Soaked Organic Sunflower Seeds
1 Organic Banana
4 Organic Dates
2 TBSP Organic Coconut Oil
Mix everything together in a high speed blender until it’s smooth. Pour the topping on top of the cake.
Top it of with some shredded Organic Raw Chocolate or some delicious berries. Put in the fridge for at least 30 min before serving.
